Day 10: Healing Veggies

 I’ve always liked veggies but they weren’t my “go to” favorites. In this chapter I learned exactly how and why vegetables were the key to health. So naturally packed with nutrition, vegetables appear designed to carry life to whatever animal consumes them, and especially humans. Several friends of mine are devoted vegetarians. The appear healthy and fit, content in their lifestyle and they don’t seem to be fazed by the lack of meat and fish in their diet.

I enjoy meat too much to go crazy (just kidding) and stop eating good meats. But my diet is probably 70% veggies and I absolutely feel much better both physically and mentally. I have now developed a “craving” for broccoli, kale, cuke and zukes, tomatoes, romaine lettuce and spinach; red and green and yellow peppers are like candy now.

For lunch I generally pack about 4 cups of raw mostly organic veggies such as celery, cucumber, cherry tomatoes, carrots, and a wedge of Laughing Cow cheese. When I do have soup, I usually choose bean, vegetable, barley, chicken and some broths. At night for a snack I may have some walnuts, yogurt, celery with a little cream cheese, a small salad with cherry tomatoes, hot peppers, bell peppers, cukes and carrot. Salad as a snack! Who would have thunk?

Because I now eat so many vegetables, the challenge has become keeping my menu fresh by discovering and combining these power foods into meals that both fill and nourish me most efficiently.

And that ends the 10 sugar fast. I did it. I abstained from all forms of sugar, ate no bread or fast carbs, eliminated my hunger for bad foods and sweets, added all the good things that were suggested, increased my exercise and the results spoke for themselves. I was almost totally off all insulin, in fact I had none for the last 5 days and my sugars were hovering around 120. Not great but 300% better than 10 days prior.

I have work ahead of me but I am proud of and pleased with my progress so far. I had stuck with it, followed Dr. Ripich’s instructions to the T (mostly) and it just worked. Everyone is impressed by the result and my attitude, including my wife, who has started going with me to the farmer’s market; something she and I would never have done together pre-30 Day Diabetes Cure. So, Day 10 is done. Bring on some fruit!
